With over 20 years of growing experience the Adelaide Hills is developing a reputation as one of the best regions to grow Pinot Noir. The regions high altitude, ample water and low vigour soils lends itself towards the production of high quality wines with finesse and sophistication.

Viticulture
Our 2008 Firebird Pinot Noir was sourced from three of our Pinot Noir blocks located at our Tunnel Hill Vineyard as well as other cool climate vineyards located in the Adelaide Hills.

Winemaking
In total five batches of fruit (MV6, 114 and 115 clones) were hand picked to protect the colour and the quality of the grapes. Each batch of grapes were gently crushed and destemmed retaining as many whole berries as possible with the aim of maximising varietal characters. The grapes were fermented in a variety of vessels ranging from 0.5 tonnes to 2 tonnes with time on skins between 12 and 20 days. To add complexity one batch was fermented with 15% whole bunches and another with 30% whole bunches and stalks. Each batch was cold soaked for a number of days, inoculated with yeast and then hand plunged between three and four times a day until dry. Maturation was completed in French oak barrels ranging from ew (30%) to 5 years old (70%) – with the best 25 barrels selected for this wine!

Tasting Notes
The 2008 Firebird Pinot Noir is made to be an elegant wine that will age well. It has the finesse and delicacy that the cooler parts of the Hills produce as well as some of the riper characters produced in the warmer northern sites - it was made to be a serious Pinot Noir! The wine exhibits vibrant cherry & plum fruits with a hint of spice. The palate is rich and satisfying with mouth filling red fruits and moderate drying tannins.
